Vacuum-packed cheese made from pasteurised cow's milk and a unique animal rennet (Auricchio's secret formula). Aged for over 4 months, it is shaped like a half cylinder (as it's the quarter of a 20kg salami-shaped whole provolone), it has a sharp, tangy flavour and a firmer texture, perfect for grating.
