Gennari's 21-24-month Riserva has a straw yellow colour, fine crumbly texture, and on the palate it is well-balanced, sweet yet savoury with fresh milk notes. This is considered the most versatile ageing of Parmigiano Reggiano, suitable to add a delicate note to dishes without being overwhelming but also ideally paired with a good Franciacorta sparkling wine or with a pear and balsamic vinegar compote.
