Rolled pancetta, made from selected Italian pigs, featuring both lean meat and derinded fat from pork belly. The process involves trimming, squaring, salting with sea salt, allowing it to rest, and then tying and casing. The pancetta is dried and cured to produce a beautifully meaty bacon that is sweet, tasty, and lean, with ruby-red marbling and pearly white fat. Perfect on its own or in recipes.
