Made from Brown Mountain cow milk, this Parmigiano Reggiano is a truly exceptional product with distinctive qualities. Aged for 72 months, it features a firm, granular texture and a robust, complex flavour profile. Its intense, nutty taste is complemented by pronounced umami notes and a rich aroma, characteristic of long-aged cheeses. The flavour becomes more savoury and sharp with time, with a crumbly consistency and deep, earthy scents of hay, nuts, and cured meat. Upon cutting, this cheese releases an appetising fragrance, showcasing a deep golden colour and visible white tyrosine crystals. Best enjoyed on its own or paired with full-bodied wines like Lambrusco or bold reds.
