Pecorino Toscano D.O.P. Fresco is a traditional soft paste sheep’s milk cheese from Tuscany, with a Protected Designation of Origin. Available from December to September, this cheese may also be available in October and November depending on prior agreements to ensure proper stock. Aged for 30–45 days, it develops a fragrant aroma and a sweet, delicate flavour that evokes the lush, green pastures of Tuscany. The paste is creamy and smooth, while the non-edible rind adds a rustic touch. Ideal for pairing with honey or fresh fruit, it is a classic example of Tuscan cheesemaking, showcasing the region's heritage and natural richness. The cheese is packaged whole and has a shelf life of 210 days from the date of delivery.
