Giardiniera is a traditional mix of carrots, celery, cauliflower, and other colourful summer vegetables that are sun ripened and pickled in order to preserve their freshness. Crisp and tangy, giardiniera can be served as an appetiser, as the perfect complement to antipasto, or even on its own as a refreshing snack.
